Potato Soup Recipe – With 60 Second Video
Potato soup is a wonderful meal to add to your rotation. It is a hearty soup that packs a ton of flavor in every bite! Additionally, it is perfect for those cold nights or when you or a loved one is feeling under the weather.
As with all of my recipes, this one offers a lot of freedom. You can double up on the flavors you love and omit the ones that you are not a fan of.

Easy Potato Soup Recipe – This one-pot recipe comes together quickly and is just as good as leftovers as it was from the first batch. Furthermore, any meal I can make in one pot is going to be a favorite, especially for the one that gets stuck doing the dishes!
Garnishing this dish is easier than making it. You can use the traditional standard of chives and grated cheese or you can add a Texas twist to it. Of course we love chives and shredded cheese. However, I love adding bacon and sour cream. Maybe add a sprinkle of jalapeño pepper for an extra kick! The garnishes are easily customizable for each family member. Thus, ensuring everyone is going to love it!

Potato Soup Recipe
Ingredients
- 3 tbs Butter
- 1 Large Onion (Red, Yellow, or White)
- 3 tbs Minced Garlic
- 2 Evenly Chopped Leeks
- 2 lbs Chopped Yukon Potatoes
- 64 oz. Chicken or Vegetable Broth
- 3 Bay Leaves
- 2 tsp Thyme
- 1 tsp Black Pepper
- 2 tsp Salt
- 1 Cup Heavy Cream
- Optional Garnish:
- Chives, Bacon, Sour Cream, Shredded Cheese
Instructions
- In a Large Pot Melt 3 tbs Butter Over Medium Heat.
- Add 1 Large Chopped Onion (Red, Yellow, or White).
- Add 3 tbs Minced Garlic.
- Add 2 Evenly Chopped Leeks.
- Stir and Allow Vegetables to Soften and Wilt.
- Add 2 lbs Roughly Chopped Yukon Potatoes.
- Stir Ingredients Together and Heat for 10 Minutes.
- Add 64 oz. Chicken or Vegetable Broth.
- Add 3 Bay Leaves.
- Add 2 tsp Thyme.
- Add 1 tsp Black Pepper.
- Add 2 tsp Salt.
- Stir Ingredients and Raise Heat.
- Bring Soup to a Boil.
- Stirring Occasionally, Cover and Lower Heat.
- Stir Again and Remove Bay Leaves.
- Lightly Mash Potatoes.
- Add 1 cup Heavy Cream.
- Blend with Immersion Blender Until Smooth.
- Taste and Add Salt and Pepper as Needed.
- If Desired, Garnish with Chives, Bacon, Sour Cream and/or Grated Cheese.
